Former Michelin-starred restaurant chefs Warwick Kidd and Zach Hermon first made a name with Wild Street Kitchen when they teamed up to hit the road with a street food catering company two years ago and absolutely smashed it!
Fans couldn’t get enough of their legendary food, especially their ‘Game Changer’ venison burgers.
Their mantra is all about taste, high quality ingredients, provenance, seasonal, sustainability, natural ethically-sourced food that has been foraged, roamed free or sourced from environmentally conscious suppliers. They won a Most Sustainable gong at the British Street Food Awards in their first year.
Now they’re creating another sensation by opening a second arm to their business, a butchers and deli stall in the market, giving shoppers the chance to buy and cook the same incredible-tasting meats for themselves at home.
Warwick and Zach are big game fans, loving the richness of flavour that you get from venison and wild boar. Their venison comes from conservation-managed deer populations on country estates in Much Wenlock and Mortimer Forest, and they butcher the meat themselves. Their wild boar comes from the Forest of Dean.
And they offer much more than game. There’s also local pasture-fed beef, free-range slow-growing Mangalitsa pork and hogget mutton from Wackley Farm, Shrewsbury, where the animals are reared and live in as natural an environment as possible, without artificial input. There’s also free-range chicken.
“We had been doing our own butchery for a long time, so it seemed like a natural progression to open a butchers and deli. We also came across Wackley Farm doing amazing things with regenerative farming and thought we really had to showcase their products,” explained Warwick.
“Zach and I really really loved the market. It’s a very inspiring and dynamic place and we wanted to be a part of it for a long while. So when this opportunity came up, we went for it.”
Warwick and Zach create their own wild boar sausages, sausage rolls and Scotch eggs. Wild boar tastes like pork but it’s earthier and leaner. They also produce an enticing range of ready meals, such as venison lasagne, wild boar enchiladas and wild mushroom stroganoff. You can find local handmade meat pies and a selection of Mr Moyden’s Cheese on their counter too and get your hands on their raved about venison burgers to cook at home.
The stall also sells mead which partners perfectly with those venison burgers. Then there are hampers curated for gifts and special occasions and venison wellingtons available for Valentine’s, Easter and Christmas time.
